Selecting raw materials

The quality of our coffee starts with the careful selection of raw materials.
N°1 has its coffee supplied directly from the country of origin, where our team has maintained efficient partnerships with local producers and cooperatives for decades. With care and passion, at N°1 we select the best varieties that grow in sub-tropical areas, from Brazil to Colombia, Africa and India.

Roasting

From the coffee bean to the aroma. Roasting is one of the first steps in the coffee-making process and is crucial to obtaining excellent coffee. A perfect blend of art and science, the art of roasting is a skill that takes years of experience to master.

Blending and Cooling

The degree of uniformity in the dimensions and properties of the coffee determines whether blending takes place before or after roasting. This phase is important, since the coffee varieties need to be blended in order to create an espresso with the ideal taste and aroma. After blending (or roasting),
the coffee is cooled, either with water or cold air.
The cooling phase must be performed immediately in order to ensure minimal loss of aromas and body.

ESPRESSO COFFEE: A GREAT PASSION!

The coffee plant is an evergreen shrub of the Rubiacee family. There are two distinct varieties: Arabica and Robusta, each with its own special characteristics and features.

The Arabica plant can reach considerable heights, up to 8 metres, but for practical reasons, pruning limits its growth to 2-3 metres.

Its fruit, called Drupe, has the appearance of a smooth berry and contains the two precious beans that develop during the various phases of its ripening, which reaches its peak when the Drupe turns a bright red colour.

After careful processing and selection, and a long period of drying, the "green coffee" beans are ready for roasting.
